Italian Parma Ham - the real Proscuitto. By law this famous ham can only be made and cured from specially-raised pigs in the gently rolling countryside near Parma, Italy.
There are manay ways to enjoy this delicacy as an appetizer. Commonly it can be served with sweet fresh fruits eg melons, mangos, figs, pears, etc. But my favourite is to eat it with a bit of nice honey.
Tapenade: a spread of Provencial origin consisting of black olives, capers, anchovies made into puree with olive oil.
My other passion: Foie Gras, a true French delicacy.
